Red Velvet Whoopie Pies

I finished the whoopie pies yesterday.

They are cake-like with a filling of marshmallow creme and cream cheese. There is no other sugar in the filling so it is not very sweet, which I liked.
I found the recipe here.  Update:  Thanks, Pea, for mentioning the frosting recipe on this page. I did not use that one. I found one that called for 8 oz. cream cheese and 1 7-oz jar of marshmallow creme.  I just whipped it until fluffy (albeit very sticky!). 

We had our first lightning/ thunderstorm last night. Our power got knocked out for over two hours. How did people ever live without electricity? 

I think all that rain got rid of the last piles of snow in my yard. Now if it dries out, I can get to work in the gardens.

For dinner last night, I  made these chicken crescent sandwiches:


Here is the recipe from the Pillsbury site:

Pillsbury Chicken Crescent Sandwiches

INGREDIENTS:


1package (3 oz) cream cheese, softened

1tablespoon LAND O LAKES® Butter, softened

2cups cubed cooked chicken

1tablespoon chopped fresh chives or onion

1/4teaspoon salt

1/8teaspoon pepper

2tablespoons milk

1tablespoon chopped pimientos, if desired (I left out and put in cooked carrots instead)

1can (8 oz) Pillsbury® refrigerated crescent dinner rolls or 1 can (8 oz) Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet

1tablespoon LAND O LAKES® Butter, melted

3/4cup seasoned croutons, crushed



DIRECTIONS:

Heat oven to 350°F. In medium bowl, mix cream cheese and 1 tablespoon softened butter; beat until smooth. Add chicken, chives, salt, pepper, milk and pimientos; mix well.

Separate or cut dough into 4 rectangles. If using crescent dough, firmly press perforations to seal. Spoon 1/2 cup chicken mixture onto center of each rectangle. Pull 4 corners of dough to center of chicken mixture; twist firmly. Pinch edges to seal. Place on ungreased cookie sheet. Brush tops of sandwiches with 1 tablespoon melted butter; sprinkle with crushed croutons.

Bake 25 to 30 minutes or until golden brown.

Just before the power died, I finished this wonky house block.

I only need to make 4 or 5 more house blocks, so it won't take too long.

  1. I think those whoopie pies are fabulous looking!!! I have never tried any of the recipes with the crescent dough, I cannot imagine they are low cal, and I am getting FAT!!!

  2. We had that storm as well last night and my bedroom kept getting all lit up with the lightning so I had a hard time sleeping. One good thing with all the rain, it melted the rest of the snow:-) Right now it's 54F, sunny and it's still morning so it should get even warmer by afternoon, woohoo! lol

    Omigosh, those whoopie pies do look delicious. Would you believe I've never tasted red velvet cake? You mentioned that the filling is only marshmallow creme and cream cheese...I love that idea, not too sweet at all. I noticed in the recipe that the filling includes 3 1/2 cups of powdered sugar, I'd find that way too sweet!!!

    Your Chicken Crescent sandwiches also look delicious and I will have to make them, that's my kind of food! lol

  4. Zoey, c'mon now, I am trying to take off the winter weight and then I see the whoopie pies...oh, dear, they look so delicious! You are an amazing cook, the sandwiches look so tasty, too.

    And your quilting, my oh my, what a seamstress you are. I sew garments but have never tried my hand at quilts. You've inspired me to 'someday' make one.

    I wanted to comment on your 'Roamy' post but the storm kept me too busy last night: what a Great post that was! Roamy and the Mackinac Bridge adventure just had me giggling. Great work, Zoey!

    Yes, it's a pain not having power. The longest here without power was at least 4 days and that's when I got Lyme Disease.
    I 'finally' mailed off your little surprises. Whew.

  7. That food is looking mighty fine, Zoey.

    The snow is mostly gone so my mind has turned to gardening. I'm looking forward to my 'salad/herb container' again this year. A different container this year if I can dig it our from the junk heap:)
